Baked Honey Garlic Chicken Drumsticks

My kids love anything they can eat off the bone (such animals at heart!) and chicken drumsticks are always a winner.  If there’s any left, chicken drumsticks are a great snack or addition to a salad or soup lunch.  They are so versatile – they go great with salads, sweet potato chips or wedges, courgette chips, vegetables, quinoa… really anything you can think of.  I served mine tonight with a butternut squash and feta salad.

Instructions
  1. Preheat oven to 180oC
  2. Melt the butter in a pan and add the garlic for 3-4 mins
  3. Take off the heat and add everything else
  4. Stir, season and set aside to cool
  5. Coat the chicken in the sauce and bake in the oven for approx. 30 mins until the chicken is cooked through

    This is amazing Stef.

    Have you considered putting together the ingredients for your recipes and selling them to order? I would definitely be interested, as some of the stuff is difficult to get hold of. Especially for the breakfast suggestions, and the chocolate slab. Not suggesting you post chicken legs!! Or alternatively suggest where we can purchase the ingredients?

    I loved reading your blog, you are an inspiration. well done.

      Hi Gill, yes when you’re starting out the ingredients are not necessarily things you would normally have in the cupboard. It can take a bit of time but once you get rid of your old ‘bad’ stuff and restock your kitchen with your new ingredients it will become a lot easier. http://www.ocado.com do a great selection and http://www.amazon.com can be good for some of the more unusual. Plus I use http://www.myprotein.com for things like my protein powder and almond butter. If you have some local friends who you can get on board then buying bulk wholesale can also be a cheaper way of doing things.
