Banana Flapjacks

I’ve tried a few sugar free flapjack recipes but the banana in this one makes it lovely and sweet and moist which is very much to the kiddies liking!  I mix up a little cacao powder, rice syrup and hot water and drizzle it over the top for added wow factor.

Instructions
  1. Preheat the oven to 200oC
  2. Mash the bananas with a fork and add to a saucepan with the maple syrup, cashew butter and coconut oil and allow to simmer until it forms a liquid
  3. Pour the liquid over the oats and stir well
  4. Grease a baking tray with coconut oil and transfer the flapjack mix, pressing it down firmly
  5. Bake for 15-20 minutes until the top starts to brown
  6. Leave to fully cool before slicing up
