Banana Fritters with Cinnamon Dust

These are pretty special but also pretty naughty so are best reserved for a special occasion, rather than troffing on a daily basis!!  They would make a great dinner party dessert and they really only take a few minutes to make.

Instructions
  1. Fill a deep saucepan with about 5cm of oil and place on a medium heat
  2. Place the flour and cornflour in a large bowl and gradually whisk in the sparkling water a little at a time
  3. Add the bananas and stir to coat
  4. Test the oil is hot enough - drop in one of the slices and if it bubbles it's ready
  5. Deep fry the banana slices in batches until golden (about 3 mins)
  6. Carefully remove each slice with a slotted spoon and place on some kitchen paper
  7. In a small bowl mix together the xylitol and cinnamon
  8. Place the fritters on a serving platter or on individual plates and sprinkle over the cinnamon dust
  9. Serve hot with a scoop of ice cream
