Mexican Mince and Salsa in Lettuce Wraps

I think I’ve said it once or twice before…. we love meals we can wrap up in lettuce.  It makes me so proud to see the kids so open to such a healthy dish.  Oh and the meat is soooo tasty.

Mexican Mince and Salsa in Lettuce Wraps

Instructions
  1. In a large frying pan, dry roast the cumin, paprika and chilli for 1 minute then add the coconut oil, celery, onion and pinch of salt for 5 mins
  2. Add the mince for 1 min, then add the tomatoes and let it all simmer for an hour
  3. To make the salsa, mix all the ingredients in a bowl
  4. Squeeze the lemon juice and a sprinkle of salt over the avocadoes
  5. When the mince is done squeeze the lime into it and serve with the lettuce leaf wraps, salsa, avocado and yoghurt
