  1. Preheat the oven to 130oC.
  2. Drop the carrots, onions, celery and bay leaves into the bottom of a casserole dish with a lid.
  3. Pop the joint on top of the vegetables and pour the stock and wine into the dish.
  4. Cover and bake for around 8-10 hours. (Alternatively cook at a higher temperature for less time.)
