Halibut Chowder

Oh wow, halibut chowder….. Who’d have thought a previous fish-hater would be cooking such a meal.  This is DE-LI-CIOUS!!!!!  AND simple to boot!!!

Instructions
  1. Fry the bacon in a frying pan until crispy and set aside.
  2. In a large saucepan, heat the ghee then add the onion and cook for about 5 minutes, until soft.
  3. Add the stock or water, celery, and sweet potato. Bring to the boil and reduce to a simmer for about 15 minutes.
  4. Add the halibut, peas and reserved bacon and cook for a further 5 minutes.
  5. Add the coconut milk and parsley, warm through and then serve.
