Instructions
  1. Preheat the oven to 180oC and line a couple of baking sheets
  2. Stir together the ground almonds, baking powder and salt
  3. Then mix in the coconut oil, maple syrup, lemon juice and zest
  4. Roll the mixture into small balls, place them onto the prepared trays and gently press to flatten
  5. Bake for 8-10 mins until golden brown
  6. Leave on the tray for 5 mins before transferring to a wire rack to cool
