  1. Heat the olive oil in a large pan and saute the celery and courgettes for about 5 minutes.
  2. Add the chopped tomatoes for a further few minutes.
  3. Add the water or stock, salt and pepper and turmeric and simmer for about 15 minutes, until the vegetables are soft.
  4. Add the basil and blend with a hand blender in the pan or transfer to a mixer.
