Orange, Fennel and Pomegranate Chicken Bake

Instructions
  1. Preheat the oven to 200oC
  2. Zest the orange and cut into eighths
  3. Put the zest, coconut oil or butter, thyme, salt and pepper into a bowl and massage it into the chicken
  4. Mix in the fennel and orange pieces and place in a roasting tin, skin facing up
  5. Roast for 45 mins, basting the chicken with the juices half way through
  6. Sprinkle the pomegranate seeds over the top to serve
