Quick Cajun Chicken

These super tasty chicken breasts could not be easier and quicker to make.  You can prepare them ahead if you wish or simply throw them together when you’re ready to eat.  Cook up an extra couple and you can use them in salads or as a snack over the next few days.  Dish them up with a simple salad and a zingy mango or avocado salsa.

Instructions
  1. Mix together all the spices, garlic and oil with a pinch of salt.
  2. Add the chicken breasts and turn them so they are well coated.
  3. Place the chicken breasts between 2 pieces of clingfilm and give them a little bash with a rolling pin to flatten them to about 1cm thick.
  4. Heat a griddle pan and cook the chicken breasts for about 6 minutes on each side (until cooked through).
