Quick Chicken and Cashew Stir Fry

So next how do you fancy something quick and easy but wholesome and nutritious?  Sound good?  Absolutely, bring it on I hear you cry!

I don’t care how limited your kitchen skills or knowledge are, we can all knock up a chicken stir fry, you just can’t go wrong and it can’t fail to be tasty, so give it a whirl!!

Instructions
  1. Blend the cashews and soy sauce until they form a paste (this can take a good 5 minutes or so).
  2. Cook the rice noodles and then run under cold water.
  3. Heat the coconut oil in a wok and fry the garlic and chilli for a few minutes before adding the chicken.
  4. Once the chicken is browned add the brocccoli and carrot and continue until everything is cooked through (about 5-10 minutes).
  5. Add the cooked noodles and cashew butter and top with the spring onions and another handful of cashews and serve straight away.
