Scrambled Eggy Brunch

A long time ago I used to be addicted to cigarettes (ulgh, can you imagine it??) these days I think I could be addicted eggs.  I could eat eggs with every meal – my chia seed omelette for breakfast, boiled eggs on salads for lunch, omelettes for dinner – but my all time favourite is an eggy brunch.  As long as you have eggs and a pan you can add in whatever else takes your fancy.

Instructions
  1. Beat your eggs with a little almond milk if using
  2. Heat a frying pan and add a little oil or butter
  3. Add the eggs to the pan and stir every now and again until just undercooked
  4. Turn off the heat just before they look ready and allow the heat to finish them off
  5. Spoon onto a plate with whatever else you fancy
