Simple Baked Fish

I do love the simplicity of fish.  This recipe could not be easier and you can adapt the flavours to your preferred tastes.  I like to add some pesto but if wanted you could simply add some butter and garlic or pretty much whatever you fancy.  Have a play around and if you have any other favourites let us all know by commenting below.

Instructions
  1. Preheat the oven to 180oC
  2. Tear off a large piece of tinfoil for each fish fillet - enough to wrap the fillet leaving a space above it.
  3. Place the fillet onto the tinfoil along with a drizzle of oil and lemon juice, a dollop of pesto and a few cherry tomatoes.
  4. Seal the tinfoil by scrunching the top but leaving a space between the fish and the top of the wrap.
  5. Place the fillets on a tray and bake them for about 15-20 minutes.
