I do love the simplicity of fish. This recipe could not be easier and you can adapt the flavours to your preferred tastes. I like to add some pesto but if wanted you could simply add some butter and garlic or pretty much whatever you fancy. Simple Baked Fish
Preheat the oven to 180oC
Tear off a large piece of tinfoil for each fish fillet - enough to wrap the fillet leaving a space above it.
Place the fillet onto the tinfoil along with a drizzle of oil and lemon juice, a dollop of pesto and a few cherry tomatoes.
Seal the tinfoil by scrunching the top but leaving a space between the fish and the top of the wrap.
Place the fillets on a tray and bake them for about 15-20 minutes.
