Instructions
  1. Preheat the oven to 180oC
  2. Tear off a large piece of tinfoil for each fish fillet – enough to wrap the fillet leaving a space above it.
  3. Place the fillet onto the tinfoil along with a drizzle of oil and lemon juice, a dollop of pesto and a few cherry tomatoes.
  4. Seal the tinfoil by scrunching the top but leaving a space between the fish and the top of the wrap.
  5. Place the fillets on a tray and bake them for about 15-20 minutes.
