Onion

boned and skinned chicken thighs
diced

pumpkin puree

courgettes
sliced

button mushrooms
sliced

Instructions
Fry the onions and spices in a saucepan.
Add the chicken and cook until browned.
Add the purée and water, bring to the boil and simmer for about 15 minutes.
Add the mushrooms and courgette and cook for a further 15 minutes or so until everything is cooked.
