Not just another turkey burger – the flavours and the sun dried tomatoes in this one make it just that little bit more special. They are so easy to make and perfect for making a huge batch for the freezer.
Sun Dried Tomato and Harissa Turkey Burgers

Mix all of the ingredients together and shape it into small patties.
Place the patties on a plate, cover with clingfilm and refrigerate for 30 minutes, or until you are ready to cook. You could also freeze them at this stage for use at a later date.
Preheat the oven to 200oC, lightly grease a baking sheet and lay the burgers on top.
Bake the burgers in the oven for about 20-25 minutes, turning half way through.
Dish them up on a bed of lettuce leaves, topped with a slice of avocado and tomato and perhaps a dollop of Dijon mustard.
