Sweet Potato Shepherd’s Pie

I promise you, this is the most delicious Shepherd’s pie you will ever taste!!!  I know, its a very bold statement but I have shared this recipe with many people already and they all agree, there’s no going back to their old versions.  In addition, I love this type of dish for its ease and flexibility – you can easily make this one ahead, ready to pop into the oven when you get home, or make a couple at the same time and pop one in the freezer for another day.  It only gets better with time and getting it out of the freezer when you haven’t had to do any work is even more satisfying!!
