Tomato and Lentil Soup

Instructions
  1. In a large pan, dry fry the cumin and coriander for 30 seconds, then add the coconut oil or butter.
  2. Add the diced onion and a pinch of salt and sauté for 5 minutes.
  3. Throw in the garlic for 1 minute then add the lentils, stock and tomatoes.
  4. Bring to a simmer and cook for about 20 minutes.
  5. Season with salt and pepper at the end and serve with a dollop of yoghurt and fresh coriander.
