Zero Pastry Quiche

Crikey, I’m really on catch up here – I’ve been testing out loads of great new recipes lately, which I need to share with you (and I will), but first I’m going to give you the gift of this wonderful creation that I teased you with earlier this week.  So often I’ve been asked for alternatives to quiches and pies for those of us who are following a healthier eating plan and I’m pleased to say that this recipe is an excellent flour free, gluten free, low carb, high protein substitution for a quiche and best of all it’s quite simply delicious!!  The kids and I happily polished this one off in a couple of days last week.  It makes a great breakfast, a perfect lunch on the run or even a mid-meal snack, so give it a whirl – you won’t be disappointed!

Instructions
  1. Line a pie dish and preheat the oven to around 180oC.
  2. Mix together the grated potato, egg and dried herbs and press the mixture into the pie dish, pushing some of it up into the sides.
  3. Bake the base in the oven for around 20 minutes, until it looks a little browned and dried.
  4. Meanwhile beat your eggs and mix in any ingredients you wish to include.
  5. Pour the egg mixture into your base and return to the oven for around 20-30 minutes until set.
  6. Remove from the oven and allow to cool a little before lifting out of the pie dish and removing the baking parchment.
