  1. Heat the coconut oil in a large heavy based pan and brown the chicken.
  2. Remove the chicken and add the carrots and celery and cook for about 4 minutes.
  3. Add the peppers and tomatoes and after about 1-2 minutes of cooking add the tinned tomatoes, water (or wine), tomato paste and oregano and stir.
  4. Return the chicken to the pan and simmer with a lid on for about 15 mins.
  5. For the remaining 15 minutes of cooking add the capers, olives and fresh herbs.
