Banana Pistachio Energy Balls

‘Do what they say’ – these are jam-packed with good quality energy and high nutrient ingredients. Ideal as a pre/post workout snack if your next meal isn’t coming soon. Also great for kids or teens who need a mid-meal pick me up.

Instructions
  1. Blend the dates, add the pecans and blend again. Finally add the remaining ingredients (except the pistachios) and blend until a smooth paste/dough forms.
  2. Roll into balls using a bit of coconut oil on your hands to stop the mixture sticking, then roll each ball into the chopped pistachios.
  3. Refrigerate for around 30 minutes until they're firm enough to eat.
  4. Store in the fridge or freezer to be enjoyed later.
