Apple Honey Loaf

This is a nice loaf for satisfying hungry kids or to serve if you have guests.  It is quite a solid and dry-ish loaf (as oppose to light and fluffy) so it’s nice served up with some butter or coconut yoghurt and some sliced fruit.

Instructions
  1. Preheat the oven to 200oc (fan 180oC)
  2. [To make the apple purée, peel and chop some apples and place in a saucepan with a cm or so of water. Cook until the apples go mushy and then blend. You can add some date or maple syrup and some cinnamon if you wish but I don't tend to bother.]
  3. Place the apple purée, honey and banana into a large mixing bowl and mash them together with a fork until you have a smooth mix.
  4. Stir in the ground almonds, chia seeds, rice flour and 4 tbsp water and mix until smooth.
  5. Grease a standard-sized loaf tin with coconut oil and pour in the mixture spreading it across evenly (it's meant to be a long loaf of about 2-3cm tall).
  6. Bake for 50 minutes, or until the top turns a golden brown and you can pull a clean knife out of the middle.
