Fanny’s Quinoa Tabuleh

Quinoa is a great alternative to cous-cous  as it is naturally gluten free and higher in protein.  I’ve actually managed to trick one particular health-food-hater who is well known to me (but who shall remain nameless!!) that this is regular Tabuleh – but sssshh don’t tell him or he’ll be suspicious of my other offerings!!

Instructions
  1. Cook the quinoa as per the instructions
  2. Add the onion, cucumber, tomatoes and mint
  3. Mix together the olive oil and lemon and drizzle over the tabuleh
