Fanny’s Super Food Ice Lollies

Summer is almost upon us (honest!!) and my kids associate sun with ice lollies and ice cream.  I’ve already posted a great sugar free alternative to ice cream for the kids and the grown ups with the banana ice cream so here is a great, easy to make alternative to standard sugar-filled ice lollies.

Instructions
  1. You can really be as creative as you like with these - the exact ingredients can be played around with to your liking
  2. Blend the coconut milk with the banana and a tbsp or so of maple syrup
  3. Pour a little of this into your ice lolly moulds (or whatever you have available - plastic cups and a stick or stiff straw are a good alternative) and pop them into the freezer to set for a few hours
  4. Next blend your remaining fruit with a little bit more of the maple syrup if it needs it (if you're using a sweet fruit like peach or mango you won't need the maple syrup) and pour this on top of the frozen mixture and pop them back into the freezer to set again
  5. If you can be bothered, repeat the process for multiple layers or simply leave as they are
