These simple stuffed peppers are great as a side to main meal, a perfect partner to salad for lunch or just a great little snack to see you through until your next meal. They’re so easy to throw together and if you don’t have the right ingredients, just put in whatever you do have!
Simple Stuffed Peppers
Preheat your oven to about 180oC.
Saute the onions and peppers in a small frying with the coconut oil.
Cut the peppers in half and place on a baking tray.
Fill the peppers with the sauteed mushrooms and peppers and the cheese.
Bake in the oven for about 25 mins until the cheese in nicely melted and the peppers are softened.
