Turkey and Black Bean Chilli with Sweet Potato

Turkey is a great, healthy alternative to beef for a chilli and this great recipe doesn’t sacrifice on taste.  The inclusion of the sweet potatoes make it a nice filling meal so all you need to add is some nice steamed veggies or a salad and you’re great to go.

Instructions
  1. Preheat the oven to 190oC
  2. Place the potatoes on a baking tray with the oil, sprinkle with a pinch of sea salt and bake for about 20-30 minutes, until soft
  3. Meanwhile, gently cook the onion, garlic, cumin, paprika, chilli powder and a pinch of salt in the coconut oil or ghee
  4. After about 8-10 minutes add the turkey and continue to cook gently until it is browned
  5. Add the tomatoes plus about 1/2 cup of water, bring to the boil and simmer for about 20 minutes
  6. Add the beans and sweet potatoes and simmer for another 15 minutes
  7. Serve with the coriander, spring onions and Jalapenos on top
