Banana Berry Oat Muffins (GF, DF, low FODMAP)

School holidays???  YES. Bored and ever hungry kids???  YES.  Then get your little tinkers involved in making these super simple, sugar free, full-of-goodness muffins.

When they’re done, keep them in a tin over the next few days and bring them out in emergency boredom/hunger situations.  Plus for those running out of the door in the morning they also make a reasonably healthy breakfast-on-the-go.

Instructions
  1. Preheat the oven to 175oC and line a muffin tin with cases.
  2. Mash the bananas in a large mixing bowl then add in the eggs and mix thoroughly.
  3. Add in the rest of the ingredients (apart from the berries) and mix again.
  4. Lastly add in the berries (chopped into smaller pieces if large) then spoon the mixture into the cake cases.
  5. Bake in the oven for 15-20 mins or until and inserted skewer comes out clean and the tops are slightly golden.
