Chicken Sagwala (Low FM, GF, DF)

This clever little flavoursome dish is nice and low FODMAP, so it won’t leave you feeling bloated or uncomfortable.  And we all love a curry don’t we, so why not give this simple and tasty Saagwala a whirl?  This will go perfectly with some Pilau cauliflower rice (previous post), or even just some delicious steamed greens.

Instructions
  1. Cut the chicken thighs into chunks and brown them in the oil in a large frying pan. Remove and set aside.
  2. In the same pan, fry the leeks, cumin, cloves, turmeric and ginger, then throw in the spinach and leave to wilt for a few minutes.
  3. Add the tomatoes, chilli and chicken to the pan and leave to simmer for about 20-25 minutes, until the chicken is cooked through.
