You know I never like to blow my own trumpet (or do I??), but this dish is restaurant quality, made in the flash of an eye with only a handful of basic ingredients. Delicious – equally refreshing and warming in any weather – and, served with some gorgeous green vegetables, makes it the perfect nutritious, yet easy meal for the whole family.

- 2 Lemons
- 2 Tbsp extra virgin olive oil
- 2 Tbsp Goats butter Melted
- 2 Heaped tbsp brown rice flour
- 1 Heaped tsp ground cumin
- 1 Heaped tsp ground coriander
- 1/2 Tsp ground turmeric
- 1/2 Tsp Ground paprika
- 450 G Cod fillet (Or other white fish)
- 3 Cloves garlic Peeled and crushed
- 1 Large handful fresh parsley Finely chopped

Instructions
- Preheat the oven to around 180oC.
- Add the juice of the 2 lemons, the olive oil and melted butter to a bowl and mix.
- Then mix the flour and spices in a separate bowl.
- Dunk the fish fillets (cut to portion size) firstly into the lemony mixture, then roll in the flour mixture to coat and place straight into a baking dish.
- Add the crushed garlic and parsley to the lemon mixture and pour this over the fish.
- Place the fish in the preheated oven and bake for around 12-15 minutes, until the fish is cooked through.
- Serve with some delicious green vegetables such as kale and green beans.
